CHEESE BY LAURENT DUBOIS MOF


A cherry-picked line-up of the very best French cheeses. Aged or fresh, creamy or hard, made from ewe or cow's milk, seasoned with chives, honey, walnuts or black cherry jam... Cheeses reflect their home regions - they are anything but commonplace. 40 seats await for you to pull up a chair and sample the best of France while embracing Laurent Dubois' mantra: "milk around the clock”.

Bread in every shape, size and type imaginable - and more. Tucked away on the 8th floor of Printemps you'll find baguettes, rolls and viennoiseries fresh from the oven every hour throughout the day. That's unless you'd rather pick up a sandwich prepared on fresh, crusty bread and piping hot quiches to take away or eat in.

The Maison Dubernet has worshipped at the temple of cured and smoked meats since 1864, home to professional expertise reinvented under the creative leadership of Jean-Baptiste Gaüzère. Precision cooking and inspired curing have established the reputation of the House's iconic products, along with unmissable foies gras . The Maison Dubernet has never had its own restaurant: until now, at Printemps du Goût.

MAISON BALME

 

When it comes to truffles, none surpass Balme. Balme relentlessly sniffs out 'black diamonds' in the unexpected Luberon region. For the first time in Paris, Thomas Balme and his childhood friend Mikel Poueyts bring their treasure trove of wild, fragrant gems to the 7th floor of Boulevard Haussmann. In addition to the preserves, condiments and specialities available here, you can also enjoy a quick catch-up with friends over a plate of pasta, risotto, scrambled eggs or a croque-monsieur.
